Apricot Chicken Crockpot Recipe

This is quite a sweet tasting crockpot recipe and should be served with greens and mustard mashed potato

  • 10 chicken thighs, skins removed

  • 1 cup of whole dried apricots, cut into quarters

  • 1 cup of white wine

  • cup of honey cup of apple juice

  • 1 teaspoon minced chilli

  • 1 chicken stock cube, crumbled

  • 1 bunch spring onions, chopped

  • teaspoon of salt

  • 1 bay leaf

  • 2 tablespoons cornflour

  • 3 tablespoons of water

  • 3 tablespoons fresh parsley, chopped

Place all the ingredients in the crockpot/slow cooker except the cornflour, water and parsley. Mix until well combined.

Cover and cook on LOW for 6-7 hours.

Mix the cornflour with the water and stir into the crockpot together with the parsley.

Cook on HIGH whilst preparing accompaniments.

Remove the bay leaf before serving.

Serve the Apricot Chicken Crockpot garnished with parsley sprigs.
