Caramelized Onion Chicken Crockpot

Caramelized Onion Chicken Recipe

  • 10 chicken thighs, skins removed

  • 3 tablespoons olive oil

  • 2 tablespoons honey

  • 3 onions, sliced

  • 4 rashers of back bacon, chopped

  • 1/4 cup of lemon juice

  • 4 cardamom pods, bruised

  • 3 tablespoons white wine

  • 1 cup of hot water

  • 1 tablespoon fresh sage, chopped

  • 1 small sprig of rosemary

  • 1 chicken stock cube, crumbled

  • 2 tablespoons cornflour

  • 3 tablespoons of water

  • Salt and freshly ground black pepper

Heat the oil in a large pan and fry the onions until light brown and starting to stick top the bottom of the pan, stirring frequently. Add the honey and cook for a further 2 – 3 minutes, stirring continuously.

Place all the ingredients in the crockpot and slow cooker except the cornflour and water. Mix until well combined.

Cover and cook on LOW for 6-7 hours.

Mix the cornflour with the water and stir into the crockpot together with the parsley.

Cook on HIGH whilst preparing accompaniments.

Remove sprig of rosemary before serving.

Serve the Caramelized Onion and Chicken Crockpot garnished with fresh sage leaves.
