Butternut Garbanzo Bean Crockpot

Butternut and Garbanzo Bean Recipe

butternut garbanzo beanThyme combines well with butternut and gives this crockpot dish a delicious undertone.

 

  • 2 cups butternut, peeled, deseeded and cubed

  • 2 cups carrots, chopped

  • 2 onions, chopped

  • 1 cup chopped zucchini

  • 2 (14 oz.) cans diced tomatoes, undrained

  • 15 oz. can garbanzo beans, rinsed and drained

  • 14 oz. can vegetable soup

  • 2 cloves garlic, minced

  • 5 sprigs of thyme

  • 1 teaspoon cumin

  • teaspoon salt

  • teaspoon allspice

  • Freshly ground black pepper

  • cup of feta cheese, drained and crumbled

Place all the ingredients except the feta into the crockpot and cook on LOW for 7-8 hours or until vegetables are tender.

Remove the thyme sprigs from the crockpot before serving.

Serve over hot couscous and sprinkle with the feta cheese.
